Sometimes you just need food that’s simple and comforting and easy to make. Actually, food should probably be like that most of the time!
Barbecue Beef Muffins are one of my all-time faves in the easy comfort-food category. I discovered a recipe for these in a magazine decades ago and tweaked it to our tastes.
The Super Trooper took a trip out of town recently and I knew that I was going to mostly be cooking for one all week (which is so, so difficult when you have cooked for five all these years). There wasn’t any point in cooking a huge variety of food and these muffins definitely made enough to keep me fed all week.
The version this dish was based on made 10 servings, but my version makes 16. (Which means there were still a few leftovers for my Hubby when he got home and I didn’t have to cook!) It already contains the meat and bread, so it makes a great dish to serve alone as an appetizer or paired with some potatoes and another side for a hearty meal.
Barbecue Beef Muffins
1 and 1/2 pounds ground beef, browned
3/4 cup ketchup
1 and 1/2 tablespoons apple cider vinegar
4 and 1/2 tablespoons brown sugar
1 and 1/2 tablespoons chili powder
1 and 1/2 cups shredded Mexican blend cheese
Buttermilk or Southern Style Refrigerator biscuits (8 biscuits)
How To Make Them:
Brown the ground beef and drain the grease. Combine ketchup, apple cider vinegar, brown sugar, and chili powder and heat to a simmer. Add to ground beef and stir. Slice open the uncooked biscuits (as if they were cooked and you were getting ready to put butter or jelly on them). This gives you 16 rounds or super thin biscuits. Press the rounds into a greased muffin tin. Spoon a heaping tablespoon of meat and sauce mixture onto each biscuit. Sprinkle cheese on the top of each one. Bake at 375 degrees for 17 to 19 minutes. Cool for a few minutes and serve!
Tip: If you have leftover meat mixture, divide it between any of the muffin cups that look like they have less. It also tastes good on a bun!
