Momma’s Simple Fruit Salad
I’ll forgive you if you sing “yummy, yummy” after you say fruit salad. Seriously, I will. Because we really can’t say the words “fruit salad” around here without someone singing it. (If you don’t get that, then you have obviously never watched The Wiggles! Look it up.)
Some days I just crave fruit and vegetables and simple dishes. And some days I want things “just like Momma used to make!” This is one of those days. Our eating habits have been so horrible lately. Lots of meats and proteins and very little in the veggie department. Also, we’ve been eating way too much in the sweets and junk food category. I did buy some fruit, so the kids have been eating that. Now if I can just get them all to eat more vegetables. Oh well, one thing at a time I guess!
I’ve been craving my Momma’s fruit salad. We actually ate this quite often growing up. It’s not as healthy as just eating raw fruit, but it has such a good flavor. The best thing is, it’s another one of those versatile recipes that you can change to suit your taste buds. Or make substitutions to when you have odds and ends varieties of fruit you need to use!
Simple Fruit Salad
2 apples, chopped
2 bananas, sliced and quartered
1/2 Cup chopped pecans or pecan pieces
2 cans fruit cocktail in 100% fruit juice
Okay now. This might get complicated, so pay attention. Are you ready?
Step 1: Open the cans of fruit cocktail and pour them into a bowl.
(By the way, I like the fruit cocktail with 100% fruit juice. The ones with syrup are just too heavy and they making the fruit salad sort of slimy after a couple of days. Nobody likes slimy.)
Step 2: Slice and quarter the bananas. Add them to the fruit cocktail.
Step 3: Chop the apples and add to the bowl.
Step 4: Add the pecans.
Mix all of the ingredients together. Chill for at least 30 minutes.
That’s it. You can eat now! Oh, and this is even better the next day. (If you can wait that long!)
