What do you make when you need something that can go from family comfort food to Holiday dinner? For me, one of my go-to dishes is Creamy Corn Casserole. It’s called a casserole, but it actually has more of a corn pudding consistency. It’s warm and creamy on the inside, with just a little bit of crust on top. And it’s oh so delicious!
This is such a versatile dish. It goes with just about any kind of entrée and can be used for just about any occasion. You can also add a few jalapenos and some cheese and give it a whole different flavor!
Creamy Corn Casserole
1 (15 ounce) can of cream style corn
1 (15 ounce) can of whole kernel corn
8 ounces of sour cream
1 stick of butter, melted
1 package of cornbread mix (I like Jiffy.)
Melt the butter. Mix with both cans of corn (don’t drain), sour cream, and cornbread mix.
Make sure you get all of the cornbread mixed in. You don’t want to see any dry stuff!
Pour into a 9 x 13-inch baking dish. Bake at 350 degrees for 45 minutes or until golden brown.
I like this best served hot, but it’s not bad cold either!! I’ve served this for Thanksgiving, Christmas, Easter, birthdays, and regular every-day dinners. If you need a little comfort food, this will do the trick!
